I’ve been daily-driving an S2000 for about six weeks now, and if I can get it together, I’m hoping to make a video review “sometime soon.”
Anything specific y’all want me to cover?

I’m curious why every s2k I ever see drives with the top up or with a hard top on. I’d totally wave at them in my Miata if they actually drove with the top down lol. Also curious if you actually can drive the car below 6k rpm, I have to imagine that's a little exaggerated.

The car has perfectly good around-town power in the 4-6k range IMO. Below 3k is really only good for maintaining a cruise.
As far as the tops, hard tops are commonly used as either a defense against seat theft, or as fallback after a slashed top, but I don’t know about the soft tops. I put mine down whenever I can.

Keeping it stock or planning to go “balls to the wall” crazy?

Pretty much stock for the foreseeable future. I think Honda hit the mark for street configuration. The engine is tuned to the point where the only significant gains are going to be FI, unless you have the 2006+ flashable ECU, and the car is pretty loud already, so no temptation for an exhaust. Maybe the K&N intake kit for that extra induction sound.
We’ll see how I feel about the suspension after I get some good rubber and hit the autocross.
One weak point is aero; I wouldn’t mind getting the OEM duckbill spoiler together with an aftermarket front bumper at some point, but that gets pricey.

Stealing the seats?

Yeah, there’s apparently a relatively major black market for S2000 parts, and the seats are a big item. Very easy to steal also :\
There are bolts you can get to make them theft-resistant, but they are hard to find.
